Description
Grape type: 100% Xynisteri – Organic Certified Mandria Vineyard
Vinification: Made from 100% Xynisteri grapes grown at high altitude in Mandria in the PDO Krasochoria region. Fermented with indigenous yeasts using the pied de cuvée method and aged in oak barrels for 6 months. The oak barrels used for ageing are topped with Acacia wood, which adds delicate floral and spice notes while letting the natural fruit shine. Bottled without stabilisation, what’s in the bottle is as close as possible to what was grown in the vineyard.
Tasting notes: Floral, citrus fruits, light spice and hints of sourdough. Medium bodied with a soft, creamy texture and surprising depth.
Food pairing: Paired best with grilled fatty fish, poultry and light pasta dishes.
