Lamb cutlets from the oven with Zambartas Xynisteri Single Vineyard
From time to time, we would like to share a recipe with you. An all-time favourite of the Zambartas family, something traditional Cypriot or an exciting new discovery in a cookbook.
Today’s recipe, is lamb from the oven. Lamb is a classic for anybody that grew up in Cyprus or visits the island frequently. It was rightly so included in a beautiful book called “Cyprus, a culinary journey”. A culinary travel book with recipes of delicious Cypriot food, gorgeous photography, travel write-ups and chapters on wine, Cyprus coffee, rosewater and more. A true tribute to the island and its culinary tradition, and therefore prominent on our bookshelf.
All the recipes in the book are superbly presented and described by German top chef Franz Keller. We loved his interpretation of lamb from the oven with lime and coriander; super easy and delicious!
Ingredients:
1kg of lamb cutlets
Olive oil for marinating & roasting
Salt
Freshly ground black pepper
Coriander Seeds, freshly ground
2 organic limes sliced
12 shallots
12 small new potatoes, peeled
500ml white wine
500ml water
1 bunch of coriander leaves
Preparation:
Season the lamb with salt, pepper and coriander seeds.
Marinate in olive oil for 30 minutes. Put the meat in a cast iron roasting pan and fry on the hob until brown.
Halve the slices of lime, potatoes and shallots and place around the meat, the shallots with the cut side facing downwards. Put the lit on the roasting pan and roast for 20 minutes in a pre-heated fan assisted oven at 180°C. Then take the pieces of meat out and keep on a plate warmer or in a second oven. Leave the shallots and potatoes in the oven until they are done.
Then add the meat back to the roasting pan, sprinkle with roughly chopped coriander leaves and serve all together.
We served it with a fresh green salad. Paired with our Xynisteri Single Vineyard 2015, it was perfect for a still cool, yet spring infused evening up at the winery!
