A novel approach to the co-vinification of Xynisteri and Mavro, the 2 main indigenous grape varieties of Cyprus. Xynisteri grapes pressed together with bunches of Mavro grapes. A winemaking technique that was created here during a moment of enlightenment. This wine counts less than 700 bottles.

Mavro covers more than half of the total vineyard area of the Island, although it was never in the spotlight as a variety producing quality wines. We decided to do things differently: We acquired a Mavro vineyard over 20 years old at high altitude, applied organic viticulture and established the ratio of quality vs quantity of production. The resulting pale Rose puts a smile on our face!
