Grape type: 95% Xynisteri & 5% Mavro- Organically Certified Mandria (Rous) Vineyard
Vinification: A playful blend of Xynisteri and Mavro grown at 1000m.. Fermented with indigenous yeasts using the pied de cuvée method, it starts in stainless steel and finishes in oak barrels previously used for red wine, adding texture and complexity. The result is a fresh but structured wine with plenty of personality, very much in the Zambartas experimental spirit.
Tasting notes: Floral & herbal, notes of bergamot, over ripe apricot and hints of spice from the oak. Medium body with refreshing acidity and long aftertaste.
Food pairing: Works well with Middle Eastern meze and Asian seafood dishes.
